Watermelon & Tomato Salad

Cook Time: 4 minutes

The watermelon and tomato salad is your one-stop shop of flavors. Bonus points: It takes only four minutes to make! 

Ingredients

  • 1 small watermelon, sliced and cut into 3-in. rounds
  • 4 ripe heirloom tomatoes, sliced
  • Lettuce (optional)
  • 4 tbsp. extra-virgin olive oil
  • 4 tsp. aged balsamic vinegar
  • 2 tbsp. Feta cheese
  • Kosher salt
  • Black pepper

Directions

Season tomato slices with 2 tbsp. olive oil, salt and pepper. If desired, add chopped lettuce to a platter.

Heat Evo to medium. Grill one side of watermelon slices, about 2 minutes. Transfer rounds, seared sides up, to platter.

Top with seasoned tomatoes. Drizzle each salad stack with remaining olive oil, and top each with balsamic vinegar and a sprinkle of feta.
